The first thing I did was to open the Web Buttons and Bars symbol library.
Dragging and dropping the symbol onto the canvas, I then clicked on the Break Link to Symbol icon.
Here we can choose to Ungroup the pieces of the button.
Select the circle.
With the Gradient Panel open we can click on the little inkwells at the bottom and change the colors.
Click on a color chip and hold the LMB (left mouse button) down and drop onto the inkwell.
As you can see I've made the changes to the gradient from the Garden swatch library.
Follow the same method for the rest of the button.
I then used other symbols on the button and reduced them. At this point I decide to select all of the piece and group it.
From there I drag and drop the new symbol onto the Symbols palette.
Here I have two separate symbols. I can overlap them to create a new symbol.
Other than for the ellipses I used for the eyes and mouth, everything else is symbols. Now if you group the object, you can then drag and drop to create this new symbol.
