Let's begin with the Ellipse Tool and create a circle. Double-click on the color chip to change the fill colors.
Click on the Gradient Tool and then change the gradient color.
Use the Gradient Tool to customize the gradient by dragging in the circle.

With the circle selected, select Expand. Choose Gradient Mesh.
Use the Mesh Tool to add lines. Use the Direct Selection Tool to add color by dropping onto the sections.
Using the Mesh Tool, click around the outside circle to create lines.
For each highlight area I had to select the points in the column and then click on the color I wanted. I did this all the way around and discovered I lacked one column which I added with the Mesh Tool.
To create the features, open the layer and lock the pumpkin group so that when we try and select our pieces, we don't accidentally pick up the pumpkin.
For the eyes, I began with ovals for the background. I then created another oval for the with black fill and white stroke. Finally, created a white fill circle for the highlight area, grouped all the eye pieces, and then duplicated the eye.
For the nose area, I created a triangle filled with orange and a black stroke using the Pen Tool. I then duplicated, Control+C and then Control+F to paste in front. I took off the stroke by unchecking the Stroke color, and then held the Shift key down to reduce the size of the second triangle.
For the mouth, use the Pen Tool to create it.
To create the inside of the mouth area, I duplicated the shape twice more and moved one up a little, then selected both pieces and used the Subtract from Shape Area found in the Pathfinder menu. I then chose the Paintbrush Tool and painted in curly cue lines each time deselecting before the next one. When I had finished, I then grouped them, and duplicated them. For the one set under the green I reduced the Transparency.
