We'll start by creating a new gradient like the one below.

Type one letter at a time and then convert it to outline. Use the Gradient tool and apply the gradient. You may have to try a couple of times to get it right. Move the letters one behind the other going right.

With all the letters selected, apply these Scribble Options.
The text should look like this.
At this point apply Arch with the settings below.
Then use the Rotate tool to rotate the word some more. Save and open Photoshop.
In Photoshop apply Reticulation.
Use the Burn tool set to Highlight to shade parts of the lettering.
Now apply a color overlay using Linear Burn.
Apply a black stroke to the lettering.
Make adjustments using Levels.
I'll call it finished.
